The result is a flavoursome alkaline, dairy free and gluten free curry that can easily be made. We often forget to keep up with your protein intake during a detox. Protein helps to keep you fuller for longer and is essential in helping the body to repair, renew and improve the immune system. Keep it to sources that are easier to digest as much as possible such as seafood, fish or vegan sources of protein such as legumes, tofu and hemp. The recipe below is wonderful as it is packed with nutrients, nourishing coconut oil and immune supporting spices.
Ingredients
- 2 onions
- Root ginger of about 2cm sized, shredded
- 4 garlic cloves
- 2 tbsps. Nutiva coconut oil
- ½ a teaspoon of turmeric
- 1 tbsps. of ground coriander
- 400 ml of organic tinned chopped tomatoes
- 200ml of organic tinned coconut milk
- 1 green or red chilli, halved, deseeded and sliced.
- 3* 200g bags large, raw, peeled prawn, thawed if frozen, drained.
- A handful of fresh coriander, chopped.
- Juice of 1 lemon
Method
1. Fry in the onions, ginger and garlic in the coconut oil for approximately 10 minutes.
2. Stir in the turmeric and coriander, and then fry for a minute or so. Add the mixture to a blender, with the tomatoes and whizz until smooth
3. Bring the mixture back to the pan, and add the coconut milk, chilli, pepper and simmer for 10 minutes
4. Lastly, stir in the prawns and cook for a couple of minutes. Make sure not to overcook them, or you’ll end up with tough prawns! Before serving, season to taste with salt, lemon, pepper and sprinkle fresh coriander on the dish
Top tips
* You may have the curry with some courgetti, quinoa, cauliflower rice or sweet potato. These are all gluten free options, making them perfect side dishes while doing a detox
* ‘Spicen’ the recipe up as you wish with more cayenne for instance
* You may also vary the recipe by adding cauliflower, a member of the brassica family and incredibly valuable for supporting the liver in detoxing
* Boost your greens intake if your quota hasn’t been met yet for the day you can even incorporate some organic and seasonal kale in the recipe
