Why not enjoy a dairy-free, no-bake, delicious cheesecake that’s full of superfoods. With added chia seeds which are high in omega-3 fatty acids and fibre which support a healthy digestive system.
This tasty cheesecake will keep for a couple of days in the fridge, so enjoy some after dinner tonight, and finish it off after lunch tomorrow!
Ingredients:
- 130g pecans
- 40 Organic Traditions shredded coconut (lightly toasted)
- 50g Organic Traditions chia seeds
- 50g Organic Traditions cacao nibs
- 3 Tbsp. Nutiva Coconut Oil
- 2 Tbsp. Organic Traditions cacao powder
For the filling:
- 5 Avocados (flesh removed)
- Juice from 6 limes
- 1 Tbsp. Lime Zest
- 100ml Nutiva Coconut Oil (melted at room temperature)
- 2 Tsp. Organic Traditions Yacon Syrup
- 2 Tsp. Organic Traditions Matcha Powder
Method:
- Mix all the base ingredients in a food processor
- When the mixture is fairly smooth transfer to the pan and press down so the mixture is flat and even.
- Place in the fridge for an hour to set
- Mix the filling ingredients in a blender until the mixture is smooth
- Add this to the pan and evenly spread on top
- Grate lime zest on top and serve
