Start off your festive evening with salmon canapes served on a nutritious avocado mousse. Pack your evening with plenty of Omega-3 essential fatty acids, healthy protein and fibre.
Avocado Mousse Ingredients
- 3 ripe avocados, peeled and mashed
- ¼ teaspoon sea salt
- Pepper to taste
- 1/2 to 3/4 cup of almond milk (Or any other milk)
- 1-2 tablespoons of Barlean’s Lignan Omega Twin Flax Oil.
- A sprig of dill to serve
Other ingredients
- Flaxseed crackers; rye bread or wholemeal bread to serve.
- 3 large pieces of smoked salmon cut into 3-4 cm squares.
- Wedges of lemon to serve
Method
1. Place all ingredients for the avocado mousse in a food processor and puree until smooth.
2. Add more almond milk as desired until the dip is the thickness that you prefer.
3. For each canape, spread the avocado mousse on the bread base or flaxseed cracker, top off with a piece of smoked salmon and present with a small amount of dill.
Note:
- As an alternative to dill, you may select chives. Cut into small pieces and sprinkle on top of each canape.
- Suggestions for the rye bread include brands such as Biona or Amisa.
- If you prefer having carbohydrate-free bases, you may use cucumber slices and layer the smoked salmon and the avocado mousse.
